Ingredients
For the Birria Beef:
- 3 lbs beef chuck roast, cut into large chunks
- 1 tbsp salt
- 1 tsp black pepper
- 1 tbsp vegetable oil
Dried Chiles & Sauce Base:
- 5 dried guajillo chiles
- 2 dried ancho chiles
- 1 dried chipotle chile (optional, for heat)
- 1 medium onion, quartered
- 6 cloves garlic
- 1 (14.5 oz) can fire-roasted tomatoes
- 1 tsp ground cumin
- 1 tsp dried oregano
- ½ tsp ground cloves
- ½ tsp cinnamon
- 2 bay leaves
- 4 cups beef broth
- 2 tbsp apple cider vinegar
For the Tacos:
- Corn tortillas
- 2 cups shredded Oaxaca or mozzarella cheese
- Chopped white onion & fresh cilantro (for garnish)
