Step 1. Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup of pasta water before draining.

  • In a bowl, whisk together eggs, egg yolk, grated cheese, and black pepper until smooth. Set aside.

Step 3. Cook the Pancetta:

  • While pasta cooks, heat a large skillet over medium heat. Add pancetta or bacon and cook until crispy. Turn off the heat.

Step 4. Combine Pasta & Sauce:

  • Add hot, drained spaghetti directly to the skillet with pancetta. Toss quickly. Remove from heat and slowly add the egg-cheese mixture, stirring constantly.

Step 5. Create the Silky Texture:

  • Add reserved pasta water a little at a time while tossing until the sauce becomes glossy and creamy.
  • The heat from the pasta cooks the eggs gently without scrambling.
