Air Fryer Veggie Medley (Low-Carb & Vegan)
Ingredients
- 1 cup broccoli florets
- 1 cup bell peppers, chopped
- 1 cup zucchini slices
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper to taste
Instructions
- Toss veggies with olive oil, garlic powder, salt, and pepper.
- Preheat air fryer to 390°F.
- Spread veggies in the basket.
- Cook for 5 minutes, shaking halfway through.
- Serve as a side dish or on top of quinoa/rice bowls.
Variation: Add Parmesan cheese before serving for extra flavor.
