Brunch Salad with Bacon & Egg

Instructions

Step 1. Cook the Bacon:

  • In a small skillet, cook the bacon over medium heat until it’s crispy. Remove the bacon and set it on a paper towel to drain excess fat. Leave about a teaspoon of bacon fat in the skillet.

Step 2. Fry the Egg:

  • Crack the egg into the same skillet with the bacon fat or a little olive oil. Fry to your desired doneness, preferably with a runny yolk. Season with paprika, salt, and pepper.

Step 3. Assemble the Salad:

  • In a large bowl, combine the mixed greens and halved cherry tomatoes. If using, whisk together the dressing ingredients and lightly toss the greens with the dressing.

Step 4. Plate and Serve:

  • Transfer the salad mixture to a plate. Crumble or chop the crispy bacon and scatter it over the greens. Add the cubes of soft cheese.
  • Finally, gently slide the fried egg on top. Serve immediately and enjoy the delightful combination of flavors and textures.
