Instructions
Step 1. Preheat and Prep:
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
Step 2. Cook the Cauliflower:
- Bring a large pot of salted water to a boil.
- Add cauliflower florets and boil for 5–6 minutes until just tender (don’t overcook).
- Drain well and pat dry with paper towels to remove excess moisture.
Step 3. Make the Cheese Sauce:
- In a saucepan, melt butter over medium heat.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk until smooth.
- Stir in sour cream, garlic powder, onion powder, salt, and pepper.
- Add 1 cup cheddar, mozzarella, and Parmesan cheese, stirring until melted and creamy.
Step 4. Assemble the Casserole:
- Place the cooked cauliflower in the prepared baking dish.
- Pour the cheese sauce evenly over the top and gently toss to coat.
- Sprinkle with the remaining ½ cup cheddar cheese.
Step 5. Bake:
- Bake uncovered for 20–25 minutes, or until bubbly and lightly golden on top.
- Optional: Broil for the last 2 minutes for a crispier cheesy crust.
Step 6. Garnish and Serve:
- Remove from the oven and let sit for 5 minutes.
- Sprinkle with fresh parsley or chives if desired.
- Serve hot as a side dish or enjoy on its own!
