Cheesy Cauliflower Casserole

Instructions

Step 1. Preheat and Prep:

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×13-inch baking dish.

Step 2. Cook the Cauliflower:

  • Bring a large pot of salted water to a boil.
  • Add cauliflower florets and boil for 5–6 minutes until just tender (don’t overcook).
  • Drain well and pat dry with paper towels to remove excess moisture.

Step 3. Make the Cheese Sauce:

  • In a saucepan, melt butter over medium heat.
  • Whisk in the flour and cook for 1 minute.
  • Gradually whisk in the milk until smooth.
  • Stir in sour cream, garlic powder, onion powder, salt, and pepper.
  • Add 1 cup cheddar, mozzarella, and Parmesan cheese, stirring until melted and creamy.

Step 4. Assemble the Casserole:

  • Place the cooked cauliflower in the prepared baking dish.
  • Pour the cheese sauce evenly over the top and gently toss to coat.
  • Sprinkle with the remaining ½ cup cheddar cheese.

Step 5. Bake:

  • Bake uncovered for 20–25 minutes, or until bubbly and lightly golden on top.
  • Optional: Broil for the last 2 minutes for a crispier cheesy crust.

Step 6. Garnish and Serve:

  • Remove from the oven and let sit for 5 minutes.
  • Sprinkle with fresh parsley or chives if desired.
  • Serve hot as a side dish or enjoy on its own!
