Instructions
Step 1. Cook the rice:
- Rinse rice until the water runs clear.
- In a saucepan, bring water (or broth) to a boil with a pinch of salt.
- Add rice, cover, reduce the heat to low, and cook 15 minutes. Remove from heat and let rest covered.
Step 2. Sear the chicken:
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken 5–6 minutes per side until golden brown and cooked through (165°F / 74°C). Remove and set aside.
Step 3. Make the coconut lime sauce:
- In the same skillet, sauté garlic until fragrant.
- Add coconut milk, lime juice, zest, soy sauce, honey, ginger, and chili flakes. Stir and let simmer 3–4 minutes.
Step 4. Combine:
- Return chicken to the skillet, spoon sauce over, and simmer 2 minutes.
Step 5. Serve:
- Plate chicken over fluffy rice, drizzle extra sauce, and garnish with fresh cilantro and lime wedges.
