Crispy Arancini with Marinara & Whipped Ricotta
Ingredients
For the Arancini:
- 2 cups cooked risotto (preferably leftover, chilled)
- ½ cup grated Parmesan cheese
- ¼ cup mozzarella or provolone, cut into small cubes
- 1 egg, beaten
- ½ cups all-purpose flour
- 1 cup breadcrumbs (panko recommended for extra crispiness)
- Vegetable oil, for deep frying
For the Marinara Sauce:
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 (14.5 oz) Can crushed tomatoes
- ½ tsp dried oregano
- Salt & pepper to taste
