Ingredients
  

For the Arancini:

  • 2 cups cooked risotto (preferably leftover, chilled)
  • ½ cup grated Parmesan cheese
  • ¼ cup mozzarella or provolone, cut into small cubes
  • 1 egg, beaten
  • ½ cups all-purpose flour
  • 1 cup breadcrumbs (panko recommended for extra crispiness)
  • Vegetable oil, for deep frying

For the Marinara Sauce:

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 (14.5 oz) Can crushed tomatoes
  • ½ tsp dried oregano
  • Salt & pepper to taste

For the Whipped Ricotta:

  • ½ cup ricotta cheese
  • 2 tbsp milk or cream
  • Pinch of salt
  • Fresh basil or parsley, chopped; chili oil (optional)
