Step 1. Marinate the Chicken:
In a large bowl, mix:
- buttermilk
- hot sauce
- salt and spices
- Add chicken pieces and coat well.
- Cover and refrigerate for at least 2 hours, ideally overnight.
This step makes the chicken extra juicy and flavorful.
Step 2. Prepare the Seasoned Flour:
- In a large shallow dish, combine:
- flour
- paprika
- garlic powder
- onion powder
- salt and pepper
- Mix well so every bite is seasoned.
Step 3. Coat the Chicken:
- Remove chicken from the marinade and let excess drip off.
- Dredge each piece in the flour mixture, pressing firmly.

Step 4. Heat the Oil:
- Heat oil in a deep skillet or Dutch oven to 350°F.

Step 5. Fry Until Golden & Crispy:
- Fry chicken in batches:
- Cook 12–15 minutes per side
- Internal temp should reach 165°F
- Do not overcrowd the pan.
Step 6. Drain and Rest:
- Place fried chicken on a wire rack or paper towels.
- Let rest 5–10 minutes before serving.
