Instructions
Step 1. Prepare the Duck:
- Score the duck skin in a crisscross pattern, being careful not to cut into the meat. Pat the duck breast very dry with paper towels. Season lightly with a pinch of salt.
Step 2. Make the Glaze:
- In a small bowl, whisk together the honey, soy sauce, rice vinegar, and five-spice powder until well combined.
Step 3. Roast the Duck:
- Preheat your oven to 200°C (400°F). Place the duck breast skin-side up on a wire rack set over a baking sheet. Roast for 20-25 minutes, or until the skin is crispy and golden brown.
Step 4. Glaze & Finish:
- Remove the duck from the oven. Brush generously with the prepared glaze.
- Return to the oven for another 5-10 minutes, brushing with more glaze every few minutes, until the skin is beautifully caramelized and the internal temperature reaches 74°C (165°F).
Step 5. Rest & Serve:
- Let the duck rest for 5-10 minutes before slicing against the grain. Garnish with fresh cilantro and serve immediately.
