Instructions
Step 1. Preheat oven and prepare pan:
- Preheat your oven to 400°F (200°C). Grease a standard 12-cup muffin tin or line with paper liners.
Step 2. Combine dry ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Step 3. Combine wet ingredients:
- In a separate medium bowl, whisk the egg, milk, melted butter or oil, and vanilla extract until well combined.
Step 4. Mix wet and dry:
- Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined. The batter should be lumpy; do not overmix.
Step 5. Add berries:
- Gently fold in the berries. If using frozen berries, do not thaw them first.
Step 6. Fill muffin cups:
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Step 7. Bake:
- Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
Step 8. Cool:
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
