Healthy Veggie Pasta
Ingredients
- 12 oz whole wheat pasta
- 2 tbsp olive oil
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 garlic cloves, minced
- 1 cup marinara sauce
- Salt & pepper to taste
Instructions:
- Cook whole wheat pasta as per package instructions.
- In a pan, heat olive oil and sauté garlic.
- Add all vegetables and stir-fry until slightly tender.
- Pour in marinara sauce and simmer for 5 minutes.
- Toss pasta in the sauce and season with salt & pepper.
- Serve warm with extra veggies on top.
