Instructions
Step 1. Prep the Bell Peppers:
- Preheat your oven to 375°F (190°C).
- Brush the bell peppers lightly with olive oil and place them upright in a baking dish.
Step 2. Cook the Beef Mixture:
- In a large skillet, heat a little oil and sauté the onion until soft.
- Add the ground beef and cook until browned. Stir in garlic and cook for 1 more minute.
Step 3. Add the Rice & Seasonings:
- Mix in the cooked rice, diced tomatoes, tomato paste, Italian seasoning, paprika, salt, and pepper. Cook for 3–4 minutes until everything blends. Stir in 1 cup of cheese.
Step 4. Stuff the Peppers:
- Fill each pepper generously with the beef-rice mixture. Press down lightly with a spoon so they’re fully packed.
Step 5. Bake:
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, add extra cheese on top, and bake 10 more minutes until the peppers are tender and the cheese is melted.
Step 6. Serve & Enjoy:
- Let them cool slightly, then garnish with fresh parsley. Serve warm!
