Instructions
Step 1. Preheat the oven:
- Set your oven to 375°F (190°C).
Step 2. Prepare the pie crust:
- If using store-bought crust, pre-bake it for about 8 minutes to prevent sogginess. Set aside.
Step 3. Cook the shrimp:
- In a large skillet, melt butter over medium heat.
- Add chopped onion and red bell pepper; sauté for 3–4 minutes until softened.
- Stir in garlic and cook for 30 seconds.
- Add chopped shrimp and cook until just pink, about 2–3 minutes. Remove from heat.
Step 4. Assemble the pie:
- Spread the shrimp mixture evenly over the pie crust.
- Sprinkle cheddar and mozzarella cheese on top.
Step 5. Make the custard filling:
- In a mixing bowl, whisk together eggs, heavy cream, Old Bay seasoning, paprika, salt, and pepper.
- Pour the mixture over the shrimp and cheese in the crust.
Step 6. Bake:
- Place the pie on a baking sheet and bake for 35–40 minutes, or until the top is golden and the center is set.
Step 7. Serve:
- Let the pie cool for 5–10 minutes before slicing.
- Garnish with fresh parsley and enjoy warm.
