Instructions
Step 1. Prep the Pork Chops:
- Pat pork chops dry with paper towels.
- Season generously on both sides with salt and black pepper. Let them rest at room temperature for 10 minutes for even cooking.
Step 2. Sear the Pork Chops:
- Heat olive oil in a large skillet over medium-high heat.
- Add pork chops and sear for about 4–5 minutes per side, depending on thickness, until golden brown and internal temperature reaches 145°F.
Step 3. Add Garlic & Thyme:
- Reduce heat to medium-low.
- Add butter, smashed garlic cloves, and thyme sprigs to the skillet.
- Tilt the pan and spoon the melted garlic-thyme butter over the pork chops repeatedly (this is called basting) for 2–3 minutes to infuse deep flavor.
Step 4. Rest and Serve:
- Remove the pork chops from the skillet and let them rest for 5 minutes to retain juices.
- Serve warm with your favorite side dish and a drizzle of the garlic-thyme butter from the pan.
