Instructions

Step 1. Marinate the Chicken:

  • In a bowl, combine the chicken pieces with olive oil, lemon juice, oregano, paprika, black pepper, and salt.
  • Mix well to coat all chicken pieces. Marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

Step 2. Prepare the Sauce:

  • While the chicken marinates, mix the tomato ketchup, red chili sauce, garlic powder, and salt in a small bowl until well combined. Set aside.

Step 3. Grill the Chicken:

  • Preheat your grill or grill pan to medium-high heat. Place the marinated chicken pieces on the hot grill.
  • Cook for 4-6 minutes per side, turning occasionally, until the chicken is cooked through and has nice char marks. Ensure internal temperature reaches 74°C (165°F).

Step 4. Assemble & Serve:

  • Arrange the grilled chicken on a plate. Garnish with sliced red onion, tomato wedges, and fresh salad greens. Serve with the prepared dipping sauce on the side.
