How to Make the Cookie Dough
Step 1. Mix butter and sugars:
- In a large bowl, cream together the softened butter, brown sugar, and cane sugar. Add the egg and mix until smooth.
Step 2. Add dry ingredients:
- Stir in the sifted flour, salt, and chocolate chips.
Step 3. Shape the cookies:
- Form dough balls of about 50 g each and place them on a baking tray lined with parchment paper. Make sure to leave enough space between them.
Step 4. Bake:
- Bake at 180°C (350°F) for 6–7 minutes until lightly golden around the edges.
Step 5. Cool down:
- Let the cookies rest on the tray and cool completely before assembling.

Take 8 cooled cookies and flip them upside down.
Pipe or spread a generous layer of chocolate ganache on each one.
Top with a second cookie.
