Instructions
Step 1. Prepare the Lobster Topping:
- In a small bowl, gently combine the chopped lobster meat, mayonnaise, celery, lemon juice, Old Bay seasoning, and salt. Mix just until combined, being careful not to shred the lobster. Cover and chill in the refrigerator.
Step 2. Prep the Buns:
- Spread a thin layer of butter on the cut sides of the brioche buns. Toast them on a flat griddle or skillet over medium heat until golden brown, then set aside.
Step 3. Smash the Patties:
- Divide the ground beef into four equal balls. Heat the griddle or heavy-bottomed skillet to medium-high.
- Place the beef balls on the hot surface, season generously with salt and pepper, and immediately use a flat spatula and press to “smash” them down into thin patties.
Step 4. Cook and Melt:
- Cook the patties for about 2 minutes until a crust forms. Flip them, place one slice of cheddar cheese on each patty, and cook for another minute until the cheese is melted and the burger is cooked through.
Step 5. Assemble the Burger:
- Place a cheese-topped patty on the bottom half of a toasted brioche bun. Spoon a generous amount of the chilled lobster topping over the burger patty. Place the top bun on and serve immediately.
