Mediterranean Chickpea Salad
Ingredients
- 1 can chickpeas, drained & rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ¼ red onion, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Parsley, oregano, salt & pepper
Instructions
- Drain and rinse canned chickpeas. Chop cucumber, cherry tomatoes, red onion, and olives.
- In a bowl, combine vegetables, chickpeas, parsley (and optional feta).
- In a small bowl, whisk 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon oregano, salt, and black pepper.
- Pour dressing over salad, toss well, and serve chilled or immediately.
