Baked Sweet Potato with Greek Yogurt & Chives
Ingredients
- 2 medium sweet potatoes
- ½ cup low-fat Greek yogurt
- Fresh chives, chopped
- Black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dry 2 medium sweet potatoes; poke holes with a fork.
- Place on a baking sheet and bake for 45 minutes until tender.
- Slice open, top with 1/4 cup low-fat Greek yogurt, chopped chives, and black pepper.
High in fiber, beta-carotene, and low in cholesterol.
