Instructions
Step 1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.
Step 2. Mix Dry Ingredients:
- In a bowl, whisk together flour, baking soda, salt, and cinnamon (if using). Set aside.
Step 3. Cream the Butter and Sugar:
- In a large mixing bowl, beat softened butter and brown sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
Step 4. Add the Bananas and Yogurt:
- Mix in mashed bananas, vanilla extract, and yogurt (or sour cream) until well combined.
Step 5. Combine Wet and Dry Mixtures:
- Slowly add the dry ingredients to the wet mixture. Stir just until combined, don’t overmix.
- Fold in chopped pistachios gently with a spatula.
Step 6. Bake:
- Pour the batter into the prepared loaf pan and smooth the top.
- Sprinkle extra pistachios on top for crunch.
- Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
Step 7. Cool and Serve:
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve warm or at room temperature.
