Instructions
Step 1. Prep the Chicken:
- Preheat the oven to 400°F (204°C). Carefully slice each chicken breast horizontally, starting at the thickest part, to create a pocket without cutting all the way through.
- Season the chicken breasts inside and out with salt, pepper, and dried oregano.
Step 2. Make the Filling:
- Stuff each chicken breast pocket with 2 tomato slices, 2 mozzarella slices, and a few baby spinach leaves.
- Secure the open side of each chicken breast with 4 toothpicks, inserted diagonally, to prevent the filling from spilling out.
Step 3. Sear and Bake:
- Heat 2 tsp (10 ml) of olive oil in a skillet over medium-high heat. Add the chicken breasts and sear for 2 minutes on each side, flipping carefully to avoid dislodging the filling.
- Transfer the seared chicken breasts to a casserole dish. (If using a cast-iron skillet, you can place it directly in the oven.)
Step 4. Rest and Serve:
- Place the casserole dish in the preheated oven and bake for an additional 15 minutes, or until the chicken is fully cooked and no longer pink in the center, with juices running clear.
