Instructions
Step 1. Season the Lamb:
- In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, and lemon juice. Rub the mixture evenly over the lamb chops.
- Let rest for 10 minutes at room temperature.
Step 2. Heat the Pan or Grill:
- Heat a cast-iron skillet or grill over medium-high heat until hot.
Step 3. Cook the Lamb Chops:
- Place lamb chops in the hot pan. Cook for 3–4 minutes per side for medium-rare, or longer if preferred. Avoid overcrowding the pan.
Step 4. Finish and Rest:
- Add butter during the last minute (optional) and baste the chops. Remove from heat and rest for 5 minutes before serving.
