For the bruschetta topping:

  • 3 medium ripe tomatoes (diced)
  • 2 tbsp fresh basil (chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Pinch of salt & pepper

For the pasta:

  • 12 oz penne or spaghetti (or pasta of choice)
  • 2 tbsp olive oil (for tossing)
  • ¼ cup Parmesan cheese (grated, for serving)
