Instructions
Step 1. Toast the Bread:
- Toast your bread slices until golden brown and crispy. Set aside.
Step 2. Mash the Avocado:
- In a small bowl, mash the avocado with a fork.
- Season with a pinch of salt and black pepper. Add a squeeze of lemon if desired.
Step 3. Cook the Egg:
- Heat oil or butter in a skillet over medium heat.
- Crack in the egg and cook to your liking: sunny side up, over easy, or scrambled.
- Season with salt and pepper.
Step 4. Assemble the Sandwich:
- Spread the mashed avocado evenly on one slice of toast.
- Top with the cooked egg and cheese slice (add tomato or spinach if using).
- Place the second slice of toast on top.
- Press gently and cut in half if desired.
