Instructions
Step 1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook rigatoni 2 minutes less than the package instructions (it will finish cooking in the oven).
- Drain and set aside.
Step 2. Make the Sausage Sauce:
- In a large skillet, heat olive oil over medium heat.
- Add Italian sausage and cook until browned, breaking it into crumbles.
- Stir in onion and cook until soft, about 5 minutes.
- Add garlic and cook 1 minute more.
- Stir in marinara sauce, diced tomatoes, Italian seasoning, red pepper flakes, salt, and pepper.
- Simmer for 5–7 minutes to let the flavors blend.
Step 3. Combine & Layer:
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine cooked rigatoni with the sausage sauce.
- Spread half of the pasta mixture in a greased 9×13-inch baking dish.
- Sprinkle with half the mozzarella and Parmesan.
- Repeat layers with remaining pasta and cheese.
Step 4. Bake:
- Cover loosely with foil and bake for 15 minutes.
- Remove foil and bake another 10–15 minutes until cheese is bubbly and lightly browned.
Step 5. Serve:
- Let cool for 5 minutes before serving.
- Garnish with fresh basil or parsley for a pop of color.

- Add a sprinkle of crushed red pepper for extra heat.
