Instructions
Step 1. Cook the Coconut Lime Rice:
- In a medium saucepan, combine jasmine rice, coconut milk, water, and salt.
- Bring to a boil, then reduce the heat, cover, and simmer for 15 minutes until the rice is tender. Remove from heat, fluff with a fork, and stir in lime zest.
Step 2. Cook the Shrimp:
- Heat olive oil in a large skillet over medium-high heat. Add garlic and chili flakes, sauté for 30 seconds.
- Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until pink and opaque. Finish with lime juice and chopped cilantro.
Step 3. Assemble the Bowls:
- Divide the coconut lime rice among four bowls. Top with shrimp, avocado slices, cucumber, shredded carrots, and extra cilantro. Serve with lime wedges.
