Instructions
Step 1. Sauté the aromatics:
- Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery. Cook for 5–6 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.
Step 2. Build the flavor:
- Add cannellini beans, vegetable broth, thyme, black pepper, salt, and smoked paprika. Bring to a gentle boil, then reduce the heat and simmer for 15 minutes.
Step 3. Blend until creamy:
- Using an immersion blender, blend the soup until smooth and creamy. If using a regular blender, blend in batches and return to the pot.
Step 4. Finish & serve:
- Stir in lemon juice, taste, and adjust seasoning. Serve hot, garnished with fresh herbs and a drizzle of olive oil.
