Instructions
Step 1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add pasta and cook according to package directions until al dente.
- Reserve ¼ cup of pasta water, then drain and set aside.
Step 2. Make the Creamy Tomato Sauce:
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in tomato paste and cook for 1–2 minutes. This helps deepen the flavor and remove any raw taste.
- Add red pepper flakes (if using) and Italian seasoning.
Step 3. Add Cream and Cheese:
- Pour in heavy cream and whisk until the sauce turns smooth and creamy.
- Add Parmesan cheese, salt, and black pepper. Stir well.
- Let it simmer for 3–4 minutes until slightly thickened.
Step 4. Combine and Serve:
- Add cooked pasta to the sauce and toss to coat evenly.
- If the sauce feels too thick, stir in a bit of the reserved pasta water.
- Garnish with fresh basil or parsley and extra Parmesan before serving.
