Creamy Tomato Pasta: Quick & Easy 25-Minutes

Instructions

Step 1. Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook according to package directions until al dente.
  • Reserve ¼ cup of pasta water, then drain and set aside.

Step 2. Make the Creamy Tomato Sauce:

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Stir in tomato paste and cook for 1–2 minutes. This helps deepen the flavor and remove any raw taste.
  • Add red pepper flakes (if using) and Italian seasoning.

Step 3. Add Cream and Cheese:

  • Pour in heavy cream and whisk until the sauce turns smooth and creamy.
  • Add Parmesan cheese, salt, and black pepper. Stir well.
  • Let it simmer for 3–4 minutes until slightly thickened.

Step 4. Combine and Serve:

  • Add cooked pasta to the sauce and toss to coat evenly.
  • If the sauce feels too thick, stir in a bit of the reserved pasta water.
  • Garnish with fresh basil or parsley and extra Parmesan before serving.
