Introduction
Step 1. Prepare Mashed Potatoes:
- Place chopped potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until very tender (about 15-20 mins).
- Drain well. Return potatoes to the pot, add warm milk and butter.
- Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
Step 2. Prepare Fish Batter:
- In a medium bowl, whisk together flour, salt, black pepper, garlic powder, and paprika.
- Gradually whisk in cold water until you have a smooth, thin batter. (Adjust water for desired consistency; it should coat the fish lightly).
Step 3. Fry Fish:
- Heat about 2-3 inches of oil in a large deep skillet or pot to 350°F (175°C).
- Dip fish pieces into the batter, letting excess drip off. Carefully place a few pieces of the batter into the hot oil (don’t overcrowd).
- Fry for 3-5 minutes, flipping occasionally, until golden brown and cooked through.
- Remove with a slotted spoon and place on a wire rack lined with paper towels to drain excess oil. Repeat with the remaining fish.
Step 4. Serve:
- Arrange crispy fried fish and creamy mashed potatoes on plates. Garnish with fresh herbs, red onion rings, and a lemon wedge. Serve hot!
