Step 1. Prepare the Chicken:
- Slice each chicken breast horizontally to create thin cutlets.
- Gently pound them to an even thickness. Season both sides with salt and pepper.
Step 2. Set Up Breading Station:
- Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third bowl.
Step 3. Bread the Chicken:
- Dredge chicken in flour, dip into egg, then coat generously with panko. Press gently so the crumbs stick well.
Step 4. Fry Until Golden:
- Heat about 1 inch of oil in a skillet over medium heat (around 350°F). Fry chicken for 3–4 minutes per side until golden brown and fully cooked.
Step 5. Rest and Slice:
- Transfer to a paper-towel-lined plate. Let rest for 2 minutes, then slice into strips.
