Instructions
Step 1. Make Syrup:
- Combine sugar, water, and cardamom (and saffron, if using) in a small pot.
- Bring to a boil, then reduce the heat and simmer for 5 minutes until slightly sticky (but not crystallized). Keep warm.
Step 2. Make Batter:
- Whisk together flour, yogurt, and baking soda. Slowly add warm water until you have a smooth, thick batter (like pancake batter).
- For easy piping, transfer the batter to a zip-top bag and snip a small hole in one corner.
Step 3. Fry Jalebi:
- Heat oil in a flat-bottomed pan over medium heat (325°F). Carefully pipe the batter into the hot oil in circular, pretzel, or spiral shapes. Do not crowd the pan.
Step 4. Soak:
- Fry the Jalebi for 2-3 minutes per side until golden and crisp. Immediately remove from oil and place directly into the warm sugar syrup for 1 minute.
Step 5. Serve:
- Remove Jalebi from the syrup and serve warm.
