Instructions
Step 1. Prepare the Ingredients:
- Wash and chop all vegetables. Pat the chicken dry and season lightly with salt and pepper.
Step 2. Layer in the Slow Cooker:
- Add the potatoes, carrots, onion, and garlic first. Then place the chicken on top.
Step 3. Add the Seasonings:
- Drizzle olive oil and lemon juice over everything. Sprinkle paprika, thyme, and rosemary evenly.
Step 4. Pour in the Broth:
- Add chicken broth gently to the sides so it covers the bottom of the cooker without washing away the seasoning.
Step 5. Cook on Low:
- Cover with the lid and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender and the vegetables are soft.
Step 6. Serve and Enjoy:
- Garnish with chopped parsley and serve warm. This dish pairs perfectly with a side of bread or rice.
