Instructions
Step 1. Glaze the Salmon:
- In a small bowl, whisk together the Dijon mustard, honey, olive oil, salt, and pepper. Brush the mixture generously over the salmon fillets.
Step 2. Cook the Salmon:
- Heat a pan over medium-high heat. Place the salmon in the pan and cook for 4-5 minutes on each side, or until cooked to your liking.
Step 3. Prepare the Herb Rice:
- While the salmon is cooking, place the fresh spinach, cilantro (or parsley), garlic, and olive oil in a blender or food processor. Blend until you have a smooth, vibrant green paste.
Step 4. Combine & Serve:
- In a bowl, mix the cooked rice with the green herb paste until the rice is uniformly colored. Season with salt. Plate the rice, top with a salmon fillet, and garnish with sesame seeds and a fresh lemon wedge.
