How to Make the Chocolate Ganache

Step 1. Heat the cream:

  • Warm the heavy cream in a saucepan until it reaches a gentle boil.

Step 2. Combine with chocolate:

  • Pour the hot cream in three additions over the pre-melted milk and dark chocolates.
  • Stir gently with a spatula (do not whisk).

Step 3. Add butter:

  • Mix until the ganache becomes smooth, glossy, and fully combined. Then add the cold butter and stir again.

Step 4. Let it set:

  • Transfer the ganache to a bowl, press plastic wrap directly onto the surface (to prevent a skin from forming), and let it set at room temperature for 3–4 hours.
