Hearty Lentil Vegetable Soup
Ingredients
- 1 cup dried lentils
- 1 carrot + 1 celery stalk, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
Instructions
- Rinse 1 cup dried lentils.
- In a pot, heat 1 tablespoon of olive oil; sauté chopped onion, carrot, celery, and garlic for 3–4 minutes.
- Add 1 tsp cumin, 1 tsp paprika, then lentils and 4 cups vegetable broth.
- Bring to a boil, then simmer for 25–30 minutes until lentils are tender.
- Stir in diced tomatoes and a handful of spinach; cook 2–3 minutes more. Adjust salt and pepper, garnish with parsley, and serve.
