Instructions
Step 1. Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside, reserving ½ cup of pasta water.
Step 2. Sauté the Mushrooms:
- In a large skillet, heat olive oil and butter over medium heat. Add sliced mushrooms and cook for 5–7 minutes until they’re golden brown and tender.
Step 3. Add Garlic and Onion:
- Stir in the minced garlic and chopped onion. Sauté for another 2 minutes until fragrant.
Step 4. Make the Cream Sauce:
- Pour in the heavy cream and vegetable broth. Stir gently and let it simmer for 3–4 minutes. Add the Parmesan cheese and stir until the sauce thickens slightly.
Step 5. Combine Pasta and Sauce:
- Add the cooked pasta to the skillet. Toss well to coat evenly. If the sauce feels too thick, add a splash of reserved pasta water until you reach the desired consistency.
Step 6. Season and Serve:
- Add salt, pepper, and chili flakes (if using). Garnish with chopped parsley and an extra sprinkle of Parmesan cheese before serving.
