Chicken & Quinoa Power Bowl
Ingredients
- 2 cups cooked quinoa
- 2 chicken breasts (grilled and sliced)
- 1 avocado (sliced)
- 1 cup cherry tomatoes (halved)
- ½ cucumber (sliced)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
Instructions
- Cook quinoa according to package instructions.
- Grill chicken until cooked through, then slice.
- In a bowl, layer quinoa, chicken, avocado, tomatoes, and cucumber.
- Drizzle with olive oil and balsamic vinegar.
- Toss lightly and serve warm.
