Veggie Stir-Fry with Brown Rice
Ingredients
- 2 cups cooked brown rice
- 1 cup bell peppers (sliced)
- 1 cup zucchini (sliced)
- 1 cup snap peas
- 2 tbsp soy sauce (low sodium)
- 1 tbsp sesame oil
- 1 tbsp ginger (grated)
- 2 garlic cloves (minced)
Instructions
- Heat sesame oil in a wok or large pan.
- Add garlic and ginger, sauté 1 minute.
- Toss in all vegetables, stir-fry for 5–6 minutes.
- Add soy sauce, mix well.
- Serve hot, overcooked brown rice.
