Instructions
Step 1. Marinate Chicken:
- In a bowl, combine chicken pieces with ginger-garlic paste, soy sauce, black pepper, egg, cornflour, all-purpose flour, and salt. Mix well to coat all pieces. Let it marinate for at least 15-20 minutes.
Step 2. Fried Chicken:
- Heat oil for deep frying in a wok or deep pan over medium-high heat. Once hot, carefully drop marinated chicken pieces in batches and fry until golden brown and crispy. Drain excess oil on paper towels.
Step 3. Prepare Chilli Sauce:
- In a separate large wok or pan, heat 2 tbsp oil over high heat. Add chopped garlic, ginger, and green chilies. Sauté for 30 seconds until fragrant.
Step 4. Add Vegetables:
- Add the cubed onions and bell peppers. Stir-fry for 2-3 minutes until they are slightly tender but still crunchy.
Step 5. Add Sauces:
- Reduce heat to medium. Add soy sauce, red chili sauce, tomato ketchup, vinegar, and sugar (if using). Mix well.
Step 6. Thicken Sauce:
- Pour in the chicken broth or water and bring to a gentle simmer. Give the cornflour slurry a quick stir and add it to the sauce, stirring continuously until the sauce thickens to your desired consistency.
Step 7. Combine:
- Add the fried chicken pieces to the sauce. Toss gently to coat all the chicken evenly.
Step 8. Serve:
- Garnish with chopped spring onion greens and serve hot as an appetizer or with fried rice or noodles.
