Step 1. Cook the Noodles:

  • Bring a pot of water to a boil and cook udon noodles according to package instructions. Drain, rinse briefly with cold water, and set aside.

Step 2. Sauté the Aromatics:

  • Heat sesame oil in a large skillet or wok over medium heat. Add garlic and cook for 30 seconds until fragrant. Stir in the green onions and cook another minute.

Step 3. Add Sauce and Veggies:

  • Add soy sauce, oyster sauce, chili crisp, brown sugar, and rice vinegar. Stir well, then add the mixed veggies and cook for 3–4 minutes until tender-crisp.
