Step 1. Build the Flavor Base:

  • In a large pot, heat oil over medium heat.
  • Add garlic and ginger, cooking for about 1 minute until fragrant.
  • Stir in the red curry paste and cook for another 30 seconds to release the flavor.

Step 2. Add Broth and Coconut Milk:

  • Pour in the chicken broth and coconut milk. Stir well until smooth and creamy.
  • Add fish sauce, soy sauce, and brown sugar. Let the soup simmer gently for 5 minutes.

Step 3. Cook the Noodles:

  • Add the rice noodles directly into the soup and cook according to package instructions (usually 5–7 minutes).

Step 4. Add Shrimp and Veggies:

  • Once noodles are almost tender, add shrimp, mushrooms, and bell peppers.
  • Cook for 3–4 minutes until the shrimp turns pink and is fully cooked.
  • Stir in spinach at the end until wilted.

Step 5. Finish with Lime & Serve:

  • Turn off the heat and squeeze in fresh lime juice.
  • Taste and adjust seasoning — more lime, curry paste, or spice if needed.
  • Serve hot with cilantro, green onions, and extra lime wedges.
