Tomato Burrata Panzanella Salad

Instructions

Step 1. Toast the Bread:

  • Preheat oven to 375°F (190°C). Toss bread cubes with olive oil, salt, and pepper. Spread on a baking sheet and toast for 8–10 minutes until golden and crisp.

Step 2. Prepare the Vegetables:

  • In a large bowl, combine cherry tomatoes, chopped tomato, red onion, cucumber, and basil. Drizzle with red wine vinegar, season with salt and pepper, and toss gently.

Step 3. Assemble the Salad:

  • Add toasted bread cubes to the vegetable mixture and toss lightly to coat. Let sit for 5 minutes so the bread absorbs some of the juices.

Step 4. Add Burrata:

  • Tear burrata into pieces and place on top of the salad. Drizzle with a little extra olive oil if desired.
