Step 1. Make the Cherry Jam:
- In a bowl, dissolve the cornstarch in orange juice.
- Add cherries, sugar, and the cornstarch mixture to a saucepan.
- Cook over medium heat, stirring occasionally, until the mixture thickens.
- Gently press the cherries with a spoon while cooking to release their juices.
- Transfer to a bowl and refrigerate until completely cooled.
Step 2. Prepare the Spiced Crust:
- Preheat your oven to 170°C (340°F).
- In a food processor, add the cookies, walnuts, spices, and salt. Blend until you get a fine, crumbly texture.
- Pour in the melted butter and pulse until it forms a moist, sandy mixture.
- Press firmly into the bottom of a 20 cm (8-inch) springform pan.
- Bake the crust for 10 minutes. Let it cool.
