Instructions

Step 1. Preheat the Oven:

  • Preheat your oven to 425°F (220°C). This high temperature helps the skin become beautifully crisp.

Step 2. Prepare the Chicken:

  • Remove the giblets from the chicken cavity and pat the chicken dry with paper towels. Dry skin means crispier results!

Step 3. Season the Chicken:

  • Rub olive oil or melted butter all over the chicken, including under the skin where possible.
  • Mix salt, pepper, paprika, garlic powder, onion powder, and thyme, then sprinkle this seasoning mix all over the chicken.

Step 4. Stuff and Truss:

  • Stuff the cavity with lemon halves, smashed garlic, and herbs. Tie the legs together with kitchen twine to ensure even roasting.

Step 5. Prepare the Vegetables:

  • If using vegetables, toss them in olive oil, salt, and pepper, then spread them in a roasting pan. Place the chicken on top of or on a rack above the veggies.
