Lemon Butter Chicken & Rice

Instructions

Step 1. Season the Chicken:

  • Pat chicken dry. Season both sides with salt, pepper, garlic powder, and paprika.

Step 2. Sear the Chicken:

  • Heat olive oil and butter in a large skillet or pan over medium-high heat.

  • Sear chicken for 3-4 minutes on each side until golden brown. Remove and set aside (it won’t be fully cooked yet).

Step 3. Sauté the Aromatics:

  • In the same pan, add a bit more butter if needed.
  • Add minced garlic and onion. Sauté until softened and fragrant (about 2–3 minutes).

Step 4. Add the Rice:

  • Stir in uncooked rice and toast it for 1-2 minutes with the aromatics.

Step 5. Add Liquids:

  • Pour in the chicken broth, lemon juice, and lemon zest. Stir well and bring to a gentle simmer.

Step 6. Nestle Chicken Back In:

  • Place the seared chicken on top of the rice. Cover with a tight-fitting lid or foil.

Step 7. Simmer:

  • Reduce heat to low and cook covered for about 20-25 minutes, or until rice is tender and chicken is cooked through (internal temp 165°F / 74°C).

Step 8. Finish with Butter & Garnish:

  • Add the remaining butter over the top, and let it melt into the dish.
  • Garnish with chopped fresh parsley and lemon slices.
