Easy Roasted Garlic Soup

Instructions

Step 1. Roast the Garlic:

  • Preheat your oven to 400°F (200°C).
  • Slice the tops off the garlic bulbs to expose the cloves.
  • Drizzle with olive oil, sprinkle with salt and pepper, and wrap each bulb in foil.
  • Roast for 35–40 minutes or until soft, golden, and fragrant.
  • Let cool, then squeeze out the roasted garlic cloves into a small bowl.

Step 2. Sauté the Base:

  • In a large pot, melt butter over medium heat.
  • Add chopped onion and sauté for 5 minutes until translucent.
  • Stir in the roasted garlic and diced potato, and cook for another 2 minutes.

Step 3. Simmer:

  • Pour in the chicken or vegetable broth.
  • Bring to a boil, then reduce the heat and simmer for 15 minutes, or until potatoes are tender.
