Step 1. Preheat the Oven:

Step 2. Mix Dry Ingredients:
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds. Set aside.
Step 3. Combine Wet Ingredients:
- In a large bowl, whisk together melted butter, sugar, honey, eggs, Greek yogurt, lemon juice, lemon zest, and vanilla extract until smooth and well blended.
Step 4. Make the Batter:
- Gradually fold the dry ingredients into the wet ingredients using a spatula. Mix until just combined—do not overmix.
Step 5. Fill the Muffin Tin:
- Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
